But how exactly does a spray dryer transform fresh milk into a fine, free-flowing powder?
1. Pre-processing the Milk
Before entering the spray dryer, the milk is standardized, filtered, and often concentrated through an evaporator. Reducing moisture content at this stage helps lower energy usage during final drying and improves the consistency of the final powder.
2. Atomization Creates Tiny Droplets
The heart of the process begins with atomization. The liquid milk is converted into extremely fine droplets using a high-speed centrifugal disc or a two-fluid nozzle. 3. Contact With Hot Air for Instant Drying
Inside the drying chamber, the droplets meet a controlled stream of hot air. Although the air is hot, the actual temperature experienced by the milk remains low due to rapid evaporation. This short contact time—often less than a second—helps protect nutrients such as proteins, calcium, and vitamins.
4. Formation of Dry Particles
As moisture evaporates, the droplets turn into solid particles. The design of the chamber and airflow pattern determines powder shape, porosity, and density. A well-designed spray dryer ensures that the final milk powder is uniform, easily dissolvable, and free of scorched flavor.
5. Collection and Cooling
The dried particles are separated from air using a cyclone or filter and then cooled to avoid caking or quality deterioration. Proper cooling and airtight storage are essential for preserving freshness and extending shelf life.
